A great getaway always includes someone else doing the cooking. But for people who love to get creative in the kitchen, there’s The Inn at Essex, home of the New England Culinary Institute (NECI). Nestled in the panoramic Green Mountains of Essex, Vermont, NECI is the alma mater of some of the country’s most lauded chefs.

Guests looking to test their culinary chops can sign up for the Chef “Inn” Training program, a hands-on cooking class led by one of NECI’s chef instructors. Participants have the opportunity to master new techniques as they prepare a sumptuous three-course meal — which they get to eat. Menus focus on fresh, local ingredients prepared with an innovative flair: Past dishes have included corn risotto and butterscotch peaches; homemade pasta with apple pie; and Vietnamese fare.
