Under the glow of candlelight reflecting off honey-colored Jerusalem stone, sip on an Israeli Salad martini while you decide what to order. Maybe the Sabra, made with chicken, sumac onions, and Israeli couscous, or the Romanian, a skewer of ground beef, garlic, and peppers. They’re just two of the flavors of coal-fired shipudim, or kebabs, on the menu at Zahav, a new Israeli restaurant earning accolades in Philly.
A dream come true for Israeli-born chef and co-owner Michael Solomonov and restaurateur Steven Cook, Zahav, which means “gold” in Hebrew, is a real gem. The restaurant offers a casual meze-centered menu, while a separate fine-dining room, the Quarter, features chef’s and vegetarian tasting menus that mine the gastronomy of Morocco, Turkey, Yemen, Lebanon, and Egypt. The offerings also showcase the Baltic and Sephardic influences that have long distinguished Solomonov’s style. “This is the food I’ve eaten my whole life,” he says. “It’s as diverse as we are.”
